One kitchen, a row of clay pots and a fire that is lit every afternoon. Muwan Palassa serves the food of its own village — rice and curry made the long way — to the handful of guests staying under the trees.

Rice and curry is not one plate; it is a table filled — small bowls arriving together, each from a clay pot that has cooked nothing else for years.
Clay-pot cooking is not a theme here; it is simply how our kitchen works. The pot holds the fire’s warmth long after the flames die, so the dhal keeps deepening while the roti comes off the firewood oven. Jackfruit and garden greens are picked the same day; the sambol is pounded by hand, never blended. Tell us in the morning what you are curious about, and it appears at dusk.

Dinner here is not a sitting; it is your hour. The drives decide the day — the kitchen simply arranges itself around them, from the first tea before the gates to the last curd after dark.
